The Arias-family runs the farm Finca Casa De Piedra and the Café Directo wet mill. Gerardo Arias manages the wet mill and uses his background as a Q-grader and an SCA-certificate in processing to ensure that all their coffees are processed to the highest quality.

They realised in 2013 that they could earn up to 50% for their coffees by handling the processing themselves and registered the Café Directo brand. Their wet mill now has a capacity of 200 tonnes of coffee per year.

This fully washed lot is crisp with a delicious acidity.

Suggested brewing recipe:

This is a bright and delicate coffee. We prefer to brew this with a brewing method that gives a higher extraction, like a drip coffee maker, or the April Brewer or Clever Dripper for manual pour over.

• 18g of medium ground coffee for 300g of 94 degree water.
• 40g bloom for 30 seconds
• First pour up to 150g
• Second pour up to 200g
• Third pour up to 250g
• Final pour up to 300g
• Target brew time 3 – 3:30 minutes
